      Tasso Kabrit: La Nobleza de la Carne de Chivo Frita

      El Tasso Kabrit es uno de los platos de mayor prestigio en Haití, reservado para celebraciones importantes como bodas y fiestas nacionales. Consiste en trozos de carne de chivo intensamente marinados, hervidos hasta la ternura y finalmente fritos hasta alcanzar una textura crujiente por fuera pero suculenta por dentro. Es el compañero indispensable del Griyo en los banquetes de lujo.

      La Alquimia de la Naranja Agria

      El chivo es una carne con un carácter fuerte. Para domar su sabor y ablandar sus fibras, los chefs haitianos utilizan grandes cantidades de jugo de naranja agria. Este ácido no solo actúa como un ablandador natural, sino que también aporta una nota vibrante que define el perfil del Tasso. Tradicionalmente, después de hervirse, la carne se deja secar brevemente al sol o al aire para que, al freírse, el choque térmico cree esa costra oscura y deliciosa tan buscada.

      Ficha Técnica

      • Porciones: 4 a 6 personas
      • Ingrediente estrella: Carne de chivo (cabrito) joven.
      • Sabor predominante: Cítrico, picante y ahumado por la fritura.

      Pasos del Maestro

      1. Corte y Marinado: Corte la carne en cubos. Marínela con Épis, sal, pimienta y abundante jugo de naranja agria durante toda la noche.
      2. Braisage: Cocine la carne en una olla con su propio jugo y un poco de agua hasta que esté muy tierna.
      3. Secado: Retire la carne y déjela escurrir. Este paso es vital para un acabado crujiente.
      4. Fritura: Fría en aceite muy caliente hasta que los trozos estén dorados y crujientes. Sirva inmediatamente con Pikliz.
