      Ingredients: A Savory Composition

      • 1 chicken, 2.5 kg to 3 kg
      • 120 g of butter
      • 3 medium ripe bananas
      • 4 tablespoons of fresh lime juice, strained
      • 1 tablespoon of fresh lime zest, grated
      • 1 tablespoon of lime zest, finely grated
      • 4 tablespoons and 1 teaspoon of amber rum (optional)
      • 2/3 cup of breadcrumbs
      • 1 teaspoon of sweet sugar
      • 1.5 teaspoons of salt
      • ¼ liter of chicken broth
      • 2 whole garlic cloves
      • A pinch of grated nutmeg
      • Pepper
      • Chili pepper

      Preparation of Roast Creole Chicken: A Concert of Flavors

      Preheat the oven to 175°C. Melt 45 g of butter in a heavy-bottomed pan. Briefly sauté the garlic cloves, then remove them. Brown the breadcrumbs in the melted butter until they are crispy and golden. Remove the breadcrumbs from the heat and add three tablespoons of lime juice, grated zest, one tablespoon of rum (optional), sweet sugar, nutmeg, chili pepper, one teaspoon of salt, and a little pepper. Reserve this fragrant mixture. In a bowl, finely chop the bananas and mix them with the last teaspoon of rum, half a teaspoon of salt, and a little pepper. Prepare the chicken by thoroughly drying it, then fill the stomach with the banana stuffing and the neck cavity with the breadcrumb mixture. Close the chicken and truss it. Generously brush it with melted butter. Roast it in the middle of the oven for about an hour and a half, basting it occasionally with its cooking juices. Once cooked, place the chicken on a large platter and let it rest for a few minutes to make carving easier. Meanwhile, degrease the remaining juices in the dish by adding a quarter liter of chicken broth. Bring it all to a boil over high heat while scraping the bottom to release the golden particles. Let it cook briskly for two to three minutes. Just before serving, warm the last three tablespoons of rum and ignite them. Off the heat, pour the still-flaming liquid over the chicken, creating a grand finale.
